Happy Hump Day everyone!
I don’t know about you, but Wednesday is the day I STRUGGLE with eating healthy (and Spicy Mc’s are healthy FYI) ;).
One thing that I struggle with come Wednesday, is my darn sweet tooth! I’m pretty good until 2:30/3pm rolls around, and then I am pulling out all the treats! So I had to get creative in the kitchen one day, and I’m not gonna lie, I made a BOMB afternoon snack and helped curve my appetite! And guess what? It took about 1 minute to make!
So put that candy and those chips away and try out this awesome snack!
*Ingredients & Instructions Below*
Ingredients:
- 1 Lightly Salted Quaker Oats Rice Cake. (Click here to purchase a pack of three).
- 1 Tbsp Hummus. (I like the Organic Sabra Roasted Pine Nut that I purchase at Costco.
- 1-2 Slices tomato
- Sprouts
- Salt & Pepper
Directions:
Top the rice cake with hummus, add tomato slices, salt and pepper, and top with sprouts. If you do not like sprouts, finely chop up spinach and use for topping. You can also add a slice of turkey on it, or I’ll sometimes just eat a slice of turkey on the side.
