Summer is right around the corner, and I am ALL about the grill this time of year! This Sweet BBQ Chicken Salad has been a go-to this past month in the Pugmire Household! Super easy to make, healthy, and delicious! Try it out, and let me know what you think! Recipe Below!
Ingredients:
- 4 Chicken Breasts
- 1 Can of Coca-cola (or Diet Coke)
- 1/2 C Yoshidas Marinading Sauce
- 1/4 C Brown Sugar (if desired)
- 1/2 head Iceburg Lettuce
- 1/2 bag of Spinach
- 1 Bell Pepper
- 1 C Mushrooms
- 1 Cucumber
- 1-2 C. mini carrots
- 1 Roma Tomato
- Bunch of Cilantro
- 1/2 C. Frozen Corn
- Feta Cheese
- Bolthouse Salsa Verde Dressing
Recipe: (serves 4-5)
For chicken:
Marinate 4 chicken breasts in Ziploc bag with can of Coca-Cola (or diet coke), 1/2 C Yoshidas Sauce (found at any grocery store, or at Costco). I will even sometimes add 1/4 c of brown sugar, but you don’t have to. Marinate 4-6 hours.
Grilling Chicken:
The key to grilling chicken and it being perfectly moist in the middle is to not flip it a ton of times. I just flip it on each side once. Grill one side for 6 minutes, and the other for 4-6min. I turn my grill on the highest temperature.
Salad:
Chop 1/2 a head of Iceburg lettuce and half a bag of spinach (or as much as you need for your family). Top with chopped bell peppers, corn (I just use the frozen kind), tomatoes, carrots, mushrooms, and cucumber. You can really mix in any vegetable desired.
Mix salad with Bolthouse Salsa Verde dressing, and top with Chicken, Feta Cheese & Cilantro.
*note: if you want to store lettuce in fridge, add the dressing on the serving of food instead of the whole entire bowl.
